Healthy Tomato and Chicken Pasta – With Hidden Vegetables For Kids

Healthy chicken pastaAre you wanting to know how to hide vegetables in food for your kids. This easy pasta recipe for kids uses simple ingredients and is quick to prepare. This particular recipe is high on my list of healthy chicken and pasta recipes and it hides vegetables perfectly. So why don’t you give it a go I am sure you will enjoy this healthy chicken pasta recipe just as much as me and my little boy.

Ingredients:

1 small carrot

1 stick of celery

Handful of baby spinach leaves

2 whole tomatoes

250ml Jar of Tomato paste

2 cloves of garlic

2 skinless chicken breasts

Dash of olive oil

Teaspoon of mixed Italian herbs

500ml of chicken stock

 

Method:

Chop the chicken into little cubes and cook in a saucepan over medium heat with the olive oil and crushed garlic cloves. I used a 3 quart Cuisinart Saucepan. Add the herbs and cook until chicken is cooked through.

Add the chicken stock and stir in the tomato paste. Turn the heat down and leave it to simmer, stir occasionally to stop it from sticking to the saucepan.

Dice up the remaining vegetables and throw them in a blender to blend them all together until you have a smooth puree`. I used a Breville Hemisphere Control Blender which does a terrific job at evenly blending up all these ingredients in less than 30 seconds.

Pour the puree` into the saucepan and cook for a further 5 minutes.

Now add it to your favorite type of pasta and you have a very healthy chicken pasta dish that kids will love.

 

The Hidden Vegetables

The beauty of this recipe is that the vegetables are hidden in the sauce of the pasta. The sauce will have a fresh flavor but the other ingredients will mostly mask the full flavor of the vegetables. This recipe is versatile and you can easily exchange the vegetables for other ones. If you find the vegetable flavor is still too strong for you and your kids, you can try using less vegetables. Just have a play with the quantities and experiment. This is a great way to get some vegetables into your child’s diet. This is one of my best healthy chicken and pasta recipes for kids and I hope you have as much success with it as I do.
